Antonin Colas was born in the Loire Valley, trained in a Michelin-starred kitchen in France, and has cooked privately in the Portland metro since 2018. Hillsboro is far enough from his kitchen that he plans extra prep time, but his Hillsboro evenings are some of his favorite work: quieter homes, longer dinners, fewer interruptions.

Each course at a wine-paired dinner sits next to one Loire bottle and one Willamette bottle of the same varietal: chenin blanc from Vouvray next to Eola-Amity Riesling; cabernet franc from Saumur-Champigny next to Yamhill-Carlton pinot. Antonin's brothers make wine in the Loire. The pairing is the signature.
