One chef. One region. Your table.
Antonin Colas was born in the Loire Valley, trained in a Michelin-starred kitchen in France, and has cooked privately in the Portland metro since 2018. Vancouver (Washington) hosts the kind of dinners Antonin built the business for: small, careful, a host who has been thinking about the menu for weeks.
Three menus by format: Le Marché (3 courses, market-driven), La Table (5 courses, signature), Le Menu Dégustation (7 courses, full tasting). $1,000 event minimum. See the full dinners page for details.
Does he travel to Vancouver?
$200 flat travel fee: Vancouver is in the 15–40 mile travel tier from Portland. He brings every plate and pan, shops the morning of, and leaves the kitchen the way he found it.
The only program of its kind in the Pacific Northwest.
Each course at a wine-paired dinner sits next to one Loire bottle and one Willamette bottle of the same varietal: chenin blanc from Vouvray next to Eola-Amity Riesling; cabernet franc from Saumur-Champigny next to Yamhill-Carlton pinot. Antonin's brothers make wine in the Loire. The pairing is the signature.
