Antonin Colas was born in the Loire Valley, trained in a Michelin-starred kitchen in France, and has cooked privately in the Portland metro since 2018. Loft kitchens in the Pearl don't always have the counter space he'd like, so he plans the menu around what the kitchen can hold: fewer hot lines, more cured and confit, the kind of menu that reads better at a small table anyway.

Included in the standard rate: central Portland is the base. He brings every plate and pan, shops the morning of, and leaves the kitchen the way he found it.

Each course at a wine-paired dinner sits next to one Loire bottle and one Willamette bottle of the same varietal: chenin blanc from Vouvray next to Eola-Amity Riesling; cabernet franc from Saumur-Champigny next to Yamhill-Carlton pinot. Antonin's brothers make wine in the Loire. The pairing is the signature.
